  1. Fry the chicken in a little oil in a non-stick frying pan.

  2. Add the chicken stock to the pan, and bring to a simmer.

  3. Thicken the sauce to your desired consistency with the cornflour mix. Add a little more if you want a thicker sauce.

  4. Add the double cream and cream cheese.

  5. Season to taste, make sure the chicken pieces are cooked through, then leave to cool.

  6. Cut out the pastry into four rectangles. Brush the edges with the beaten egg.

  7. Spoon the chicken mixture into the middle of two of the rectangles, making sure not to add too much so it doesn't burst out of the sides.

  8. Place the other rectangles on top. Crimp the edges with a fork, then use the point of a sharp knife to create six wavy lines across the pastry. Brush the tops with the rest of the egg wash.

  9. Bake for 20 minutes at 200°C/180°C fan/Gas Mark 6.
